Chef Maneet Chauhan of Vermilion presenting: a new menu with an Indian-Latin Confluence, including blue crusted scallops w/Calabaza Puree, Malabar crab cakes w/ mango slaw & panch puran chutney, Coriander-mint Maachali (Tilapia) wrapped in banana leaf w/Sambar Dal (yellow lentil), Rice Phirnee: w/Pistachios, raisins, saffron (India Creme Brulee). Appropriate Wine Served with each Course. Vermilion was rated as a “Best New Restaurant” by: Travel & Leisure, Town & Country, Chicago Magazine, Bon Appetit, Wine Enthusiast, and USA Today.
